Behind the Beans: A Roastery Tour with Allpress Espresso Vacherin was delighted to join Well Grounded on a tour of the Allpress Espresso roastery in Dalston last month, offering a rare look at everything that happens before coffee reaches the cup. The experience gave Well Grounded students and guests the chance to meet members of the Allpress team and follow the full journey of each coffee bag, from bean selection and roasting through to final packaging. Walking through the roastery highlighted the scale, precision and care that go into every roast. Time was also spent in the Allpress workshop, where the team carries out maintenance and repairs on coffee machines from their different cafés across London, offering a fascinating insight into the technical expertise that supports great coffee every day. The tour further highlighted how many of those now working across the roastery began their careers as baristas, later moving into production, engineering and other behind-the-scenes roles; a reminder of the breadth of career pathways within the coffee industry. The experience concluded with a cupping session, where Well Grounded students and guests, including our Head of Coffee, Marc Pierre Dietrich, tasted and compared a range of Allpress Espresso roasts. This hands-on session deepened understanding of flavour profiles, roast styles and overall coffee quality. Huge congratulations to Tom Rule, who has been promoted to Vacherin’s Managing Director Designate, and Phil Roker (the incumbent Managing Director of ten years), who will step into the role of Vacherin’s Chairman later this year. This fantastic leadership evolution celebrates our commitment to talent development and progression. It’s also good news for the business, its clients and people, as Vacherin prepares for its next era of growth with Tom’s fresh ideas and perspectives, supported by Phil’s extensive knowledge and experience. Phil said: “Tom is the right person for me to hand the reins to. He is an exceptional talent who will retain the core values and spirit that make Vacherin truly special, while embracing new ideas, technology and challenges.” Tom joined the Vacherin team in 2012 as operations manager, successfully progressing to operations director and now Managing Director Designate. His outstanding contribution includes creating growth opportunities for Vacherin and its clients, as well as being instrumental in Vacherin’s social, wellbeing and community initiatives. Maintaining continuity for clients and team members is priority for Tom and Phil, who will work closely together over the coming months before Phil becomes Chairman where he will continue to support Tom and the business. This year, we marked a very special milestone -10 years of partnership with Luminary Charity and Luminary Bakery, giving us a chance to reflect on what a decade of collaboration really means. To cap off our tenth anniversary, an amazing 40 Vacherin team members from across our sites and offices took on the Three Peaks Challenge. Together, we raised an extraordinary £32,500 to support Luminary’s work empowering some of London’s most disadvantaged women. This challenge was the finale to a year filled with meaningful moments, from fundraising initiatives and special events, to the opening of Luminary’s new central production kitchen, co-funded by Vacherin and our sister brand Company of Cooks. A space that will help grow their impact, expand training opportunities and bring their beautiful bakes to even more people For ten years, we’ve been proud to support Luminary through: - Selling their baked goods across our sites - Providing mentoring and work placements - Collaborative fundraising and team challenges - Co-investment in spaces that help Luminary grow Looking back, we’re incredibly proud of the impact our teams have made.

Turning Waste into Worth We’re proud to launch the Glass Plate Project, a collaboration with renowned ceramist Mark Ciavola, the pioneer behind Glass Porcelain. Through years of research, Mark has developed a sustainable process to transform single-use glass into a durable, eco-conscious material. Together, we’re repurposing discarded glass bottles from Clarksons into beautiful, functional pieces now used in our own dining spaces. We’re big into Mexican flavours and earlier this month, the Vacherin food team had a tour of the production site of Masafina, one of our favourite suppliers, to learn more about what makes them tick. Laura Copp and Andrea Renaud shared their inspiring journey of building Masafina from the ground up, driven by their frustration with the lack of authentic, high-quality tacos in the UK. In under three years, they’ve created something truly special, and rather delicious! And as soon as the team stepped into the tortilleria the incredible smell of freshly toasted tortillas and tacos filled the air. We watched the entire process, from grinding the corn and making the dough, to finally pressing and cooking the tacos. The visit finished with a tasting session of the freshly made tortillas paired with an impressive range of delicious homemade salsas.
